Cretan grape varieties grew up alongside grilled fish, slow-cooked lamb, wild greens and whatever cheese was in the house. They were made to sit next to a weeknight dinner, not a twelve-course tasting.
Here's how to match them to what's actually on your table.
The simplest rule in pairing has nothing to do with red or white. It's about weight. A light, delicate dish gets overwhelmed by a big, tannic wine, and a rich, fatty dish will make a delicate wine disappear. Match intensity first, and the rest tends to fall into place.
Vidiano has enough body and stone-fruit richness to stand up to grilled or baked fish, but enough freshness to keep it from feeling heavy. It's the wine to reach for on a Tuesday when dinner is whatever came off the boat that morning.
Soft tannins and bright red fruit make Kotsifali an easy match for tomato-based dishes — a weeknight pasta, baked pasta with cheese, or a simple stew. The acidity in the wine meets the acidity in the tomato instead of fighting it.



Liatiko is lighter in colour than most reds but doesn't lack in character — dried fruit, herbs and a savoury edge that was practically built for slow-roasted lamb or oven-baked goat. Serve it slightly cool and let it do the work.
Deep in colour with firm tannin, Mandilari is often blended for structure — but on its own it's a reliable match for grilled meats, cured sausages, or a plate of cheese and olives with no plan at all.
None of this is a rulebook. It's a starting point. The best pairing is the one that gets a bottle opened on a normal Tuesday instead of saved for a special occasion that never quite arrives.
